There’s something undeniably satisfying about poached pears, and poaching them in tea creates a unique depth of flavour, without overwhelming sweetness. Ingredients (serves 4)
- 4 pears (ripe but firm)
- Zest and juice of half an orange
- 150g caster sugar
- 500ml water
- 1 tea bag of Libertine Blends Luxe Grey tea (or 1 Tbsp in an infuser)
- 4 scoops vanilla ice cream (or coconut yoghurt for a healthier alternative)
Method
- Peel the pears, cut in half and brush with the orange juice
- Put the Luxe Grey Tea, sugar and 500ml of water into a small-medium sized pan
- Bring the water to the boil, then simmer until the sugar has dissolved (around 2-3 mins.)
- Remove the tea from the pan, then add the orange zest to the remaining liquid
- Lower the pears into the syrup and simmer gently for 15-20 minutes, until there’s around 1 cm of liquid left in the pan
- Take the pan off the heat and allow to cool
- In each person’s bowl, serve two halves of poached pear with a scoop of ice cream, and garnish with fresh mint leaves. Yum!
